What country are you in? There are very few countries in Latin America that support LTE Cat M1.

There does not appear to be LTE Cat M1 there. It's different than regular LTE and carriers specifically need to support LTE Cat M1 for the B404X/BRN404X to work; there is no fallback.
Using a 3rd-party SIM will not help except in the case that the carrier(s) that support LTE Cat M1 are not supported by Particle EtherSIM. In Panana, EtherSIM works on Digicel and Movistar.
If you really want to try it, don't follow the instructions you linked to, those are for the older Electron. Use Device Restore USB to install Device OS 5.9.0 and then follow the instructions here for the Boron. However I'm almost certain it will not work.

Indeed it didn't work, first I did the factory reset process to version 5.9.0, but when I follow the next steps it comes out that the version is 6.1.1 which doesn't make sense.
You can manually change the target version to 5.9.0, which is what you should do.
The change to allow the BRN404X to connect to non-US/CA/MX bands is only in 5.9.0 at the moment as the change has not been made in the 6.x branch yet. This shouldn't matter in Panama as it looks like only compatible bands are used, but it's worth getting the change just in case.

The BRN404X does not support Wi-Fi.
The M-SoM does both cellular and Wi-Fi. The Photon 2 does Wi-Fi only.
