Is there a way to connect Particle’s Asset Tracker v2 to a Relay Shield?

No, but you can get one of the relay boards from NCD. There are versions for an Electron that won’t work, because the AssetTracker is in the way, but they also have a line of generic I2C relay boards that you can use at the same time as the AssetTracker shield.
Of course you could also use a generic relay board from eBay/AliExpress, but the NCD boards are known to work and include Particle libraries.
