I recommend looking into the MSoM LTE module that has built-in GPS, but requires hardware design and firmware development. Or for a more off the shelf solution, take a look at the Monitor One device. However, this still might require some custom firmware and hardware design based on your needs.
@jonamleonel besides @ericpietrowicz solid recommendations, you could also consider the new, soon-to-be-released Muon which will work with raspberry pi Hats and will support GPS along with many other features and available enclosures. Though the Muon is a "development" board, I suspect it will be used in products much like the Boron is.
