Can anyone point me in the direction of finding information out about setting up a Client/Server Photon/CoAP network. It would consist of just a single Photon. Or does anyone know if the mesh network devices (Argon, Boron, Xenon) are better suited to handle CoAP? Thank you in advance.

There is a “coap” library on Web IDE and the github repo looks like it was written by @hirotakaster. From the readme:
In this exmples need CoAP server libcoap or microcoap server for check the example program. There is setting the libcoap on Ubuntu Linux. But if there don’t use CoAP server(request/reseponse), following setting don’t be needed.
