Would anyone happen to know if the 3 new Mesh devices’ GPIO pins will be 5V tolerant?

The GPIO on the nRF52840 is not 5V tolerant.

The absolute maximum is VDD + 0.3 V, so 3.6V, but you should limit the voltage to 3.3V if possible.
