I want to turn on particle devices with mac sierra siri / windows 10 cortana. Any idea how to setup? Does Particle have home automation software to download for mac siri / windows cortana?

Unfortunately, you can not currently use homekit commands within Siri on MacOS Sierra.
I don’t know why Apple does not allow it, but I hope they fix it soon.
I have had a lot of success with using Homebridge on my Raspberry Pi to monitor sensors and call functions on one of my Photons.
I can use the iOS home app to control stuff.
