Complete Custom Firmware without Particle Components

Hey there.
I am currently developing some IOT Devices based on STM32 controllers.
The Photon board would fit my Hardware Specific needs perfectly fine. But i don’t want to use the photon specific firmware rather develop my own firmware. So the question is: Can i completely reprogram the controller with my own firmware or is the chip read/write protected?
